Ingredients

2 lbs pork shoulder, cubed into bite size pieces

1/4 cup Big Cove Foods ‘Espresso Nice’ spice blend

1 orange, juiced – about 1/2 cup

3 garlic cloves, smashed

1 tbsp olive oil
-
1 tbsp apple cider vinegar
-
1 cup stock
-
1/2 cup water
-
1 tsp salt
-
1 pint cherry tomatoes
-
1 medium sized eggplant, cut into bite size cubes
Directions
In your instant pot dish, thoroughly combine the pork and ‘Espresso Nice’ spice blend. Now add the orange juice, garlic cloves, olive oil, apple cider vinegar, stock, water and salt. Toss together well and lock the lid on top and close the vent. Set the pressure to high and cook for 40 minutes.
Manually release the pressure when cook time is complete. Pop off the lid and add in your eggplant and cherry tomatoes. Lock the lid back on, close the vent and set on high pressure for another 10 minutes.
When time is up, manually release the pressure.
We had this lovely warming dinner served over rice!

I traveled to Ontario for Christmas (2023) and brought Pouches of Big Cove Pick your Own Five. It was a big hit several years ago when I did it. Great feedback from everyone back then and everyone was very happy to recieve them again. The blends and recipes are great.
Had to order them all so we could try the ones we haven’t yet!
I purchased the Taco Enhancer product and first tried it when making some ground beef for my tacos. I tried the meat just using the taco spice and it did well just being on its own. It provided a reasonable amount of heat to the meat that wasn't overpowering but was noticeable. As I ate more of the meat with the spice I felt the heat of the product increase which was nice. If you don't like hot stuff, this is a good product to get you started to feel a little heat that is reasonable. If you like hot stuff, this probably won't do it for you but it does provide a small kick. It paired well with the ground beef as the meat really soaked up the spice.
We used this spice on a salad as it said it contained mango. While we typically start away from anything Porcine, this one is a must but. The museum and garlic mixed with the mango gives it a unique flavour that we didn't even realize we were missing from our cupboard until we tried it!

The best taco seasoning I have found for Taco Salad and Tacos but also great as a seasoning on salmon, chicken, beef and pork. It's one seasoning I use frequently!
I enjoyed the taco enhancer on nachos . It had the right amount of heat and the spice combo blended well. Looking forward to trying it in different recipes , including tacos and more !

The aroma of the spices are strong and you can smell it outside of the package itself without even opening the package. it's strong in the cumin and garlic and hot spices. the color of the spices are a very deep rich orange/red and I love that! you don't have to use a lot because it's or a high quality and strength otherwise you can very quickly end up with an over spiced menu. I like very much the fact that the package is resealable too.
I was looking for a quick mix to spice up my steak and came across this blend. Although it says lamb, the spices worked really well with the steak. I love that it's quick and painless. I don't have to figure out my own spice blend, I'm able to quickly reach for a high quality product that I know I can count on. I'm definitely going to restock when I run out!
Love love love, can't say enough good things about this blend. I tried the small pouch and just gave it a try and man was I surprised with how good it was. I am now a new fan of curated packs of spices, just tastes authentic. The only issue I had was it was pricier than transitional spices which I could see could drive some customers away.
The Egyptian Summer spice blend was definitely gourmet. I loved that I could taste the individual spices while it compliments one another altogether. I definitely struggle with knowing how to mix spices and this blend definitely helped make it more accessible. I added it to some chicken wings and it was so good! I would definitely buy it again or try another one of their spice blends.
