Smashed Cucumber Salad
Great side dish that is easy to whip up!
1 tbsp Big Cove Foods Ancient Chinese Secret
1 tbsp rice wine vinegar
1 tbsp soy sauce
1 tbsp sriracha
1 tsp sesame oil
1 tsp sugar
1 english cucumber
Cut the cucumber in half and using a mallet or a heavy frying pan, smash the cucumber until it starts to break down into about 3 chunks, as seen on top picture on the right. Then slice into about 1 inch pieces. Add to bowl and set aside.
Make you sauce, in a small bowl add the rest of the ingredients together and mix until sugar is dissolved. Toss the dressing with the cucumbers and cover. Allow to marinate up to 24 hours.
