Asian Pear and Blue Cheese Salad with Juniper Apple Shrub Dressing
This salad is refreshing and full of crunch and bite! Don't miss out on serving up this salad along side your BBQ fav's this summer!
2 celery stalks, sliced 3/4" thick on angle
2 scallions, sliced thin on an angle
1 red pepper, thinly sliced
1 Asian Pear, thin wedges
2 cups arugula
1 tbsp lemon juice
1/4 cup Juniper Apple Shrub
1/4 cup olive oil
1/4 cup walnuts, roughly chopped
1/4 cup blue cheese, crumbled
Add the celery and the scallions to a bowl with cold water to cover and a couple ice cubes. Allow to soak for 20 minutes.
Drain the celery and scallions and add to a large salad bowl. Combine with the red pepper, asian pear, arugula, lemon juice, Juniper Apple Shrub and olive oil. Toss generously. Top off with the walnuts and blue cheese.
