Porcini Asparagus Genie with Cauliflower
Can’t get enough of our newest spice, ‘Porcini BBQ Genie’, on vegetables!
You know when something just feels right? This feels right.
- 1/2 bunch of asparagus, cut into 1" pieces
- 1/4 head of Cauliflower, cut into florets
- 2 tbsp Olive Oil
- 6 anchovy fillets
- 2 garlic cloves, minced, minced
- 1 tsp white wine vinegar
- 2 tbsp Grainy Mustard
- 1 tbsp Big Cove Foods Porcini BBQ Genie
- pinch of black pepper
- 2 dashes Worcestershire sauce
- 1 Bay Leaf
- 1 tbsp of butter
In a small bowl combine the garlic, vinegar, mustard, Porcini BBQ Genie, pepper and Worcestershire sauce. Smash until you get a paste consistency.
Heat the olive oil in a large pan over medium high heat. Add the Asparagus, cauliflower, bay leaf and that porcini anchovy paste you just made. Cook just until your asparagus turns a bright green, or tender how you like it. Take off heat and add the butter until melted and mixed thoroughly.
