Coconut Milk Garam Masala BBQ Chicken

We came across a recipe in a magazine for a Tandoori-style BBQ Chicken - sounds delicious! But what if we swapped the general garam masala ingredient for Big Cove Foods Coconut Milk Garam Masala? Yup. Delicious. And so easy!

 

- 1 3/4 cup plain Greek yogurt
- juice of 2 limes
- 4 large garlic cloves, minced
- 1 tbsp grated ginger
- 2 tbsp Big Cove Foods Coconut Milk Garam Masala
- salt and pepper
- About 3lbs bone-in chicken parts
Serve with rice or naan bread

 

 

Whisk together the yogurt, lime juice, garlic, ginger, Coconut Milk Garam Masala, and 1/2 tsp salt. Reserve about a cup of the marinade and set aside as your serving sauce.

 

Combine the marinade with the chicken and toss to coat.

 

Start up the BBQ and get it to a medium heat level. Throw on the chicken, nicely, and grill for about 15 minutes each side. You should have nicely charred exterior while the interior reaches 165 degrees.

 

Serve with the saved sauce and rice or naan bread. So easy and delicious!

(We threw some sliced zuchinni's on the bbq right after the chicken came off, charred them and tossed with oil, balsamic and salt and pepper.)
