Tomato Soup with Mary Had a Lot of Lamb

We made a delicious tomato soup using our Mary Had a Lot of Lamb spice blend and fresh garden tomatoes! So easy and delicious!


3 lbs fresh tomatoes, roughly chopped

1 onion, diced
1 head of garlic, diced
3-4 TBSP Mary Had a Lot of Lamb Spice Blend

4 TBSP butter
1 1/4 cup chicken stock
1 bay leaf
Cream - optional
Chili Flakes - optional


In a large heavy bottom pot, melt the butter on medium heat and add the onions. Cook about 5 minutes until soft and then stir in garlic and Mary Had a Lot of Lamb Spice Blend. Cook for another minute.

Toss in your tomatoes and coat them with your garlic and onion mixture before adding your chicken stock and bay leaf. Bring to a boil and then lower to a simmer, partially covered. Allow to simmer about 20 minutes.


Using a blender, or immersion blender, puree all ingredients as much as you would like, we like to keep ours with a few bits in tact.


Add your cream if desired and stir. Top with chilies if that's your style!
