Roasted Jerusalem Artichokes

We wait for these delicious tuber vegetables all year long! Here's just one of the ways we enjoy them:

1 lb Jerusalem Artichokes

unsalted butter

black salt, or kosher salt


2 tbsp Big Cove Foods Mary Had a Lot of Lamb


Preheat the oven to 400.


On a baking sheet, smear a thick coat of butter all over. Thoroughly clean the jeruslem artichokes and slice in half length wise.


Place cut side down on the pan and sprinkle with the salt, pepper and Mary Had a Lot of Lamb.


Roast them in the preheated oven for 40 minutes. Flip them and roast for another 15-20 minutes.


Enjoy with Ketchup or mayo!
