We found some baby bok choy at the market and thought it would be fun to play around with the sous vide. It makes a great side to any meal! Using the sous vide really infused the flavours and it still keeps a bit of the crunch!
Cook Time: 183 F for 20 minutes | Prep Time: 5 minutes
2 bunches of baby bok choy (about 2 lbs), sliced in half
4 garlic cloves, minced
1 TBS Big Cove Foods Ancient Chinese Secret Spice Blend
1 TBS soy sauce
1 TBS olive oil
1/2 TBS fish sauce
1. Set sous vide to 183 F.
2. Mix together all ingredients in sous vide bag, or if you prefer, in a bowl then place in sous vide bag. Make sure you get as much air out as you can. If you can vacuum seal that would be the best way to get out all of the air. I also like to put a couple of stainless steel butter knives in the bag to weigh it down.
3. Place bag in sous vide. you want it to be under the water, not floating on top like some kind of big shot. Set timer for 20 minutes.
4. Wait 20 minutes.
5. Take sous vide bag out. Put the baby bok choy and all the tasty juices on a plate or bowl or whatever you like to eat off of.
